Sant’or Roditis is a white wine from Sant’or Wines, located in Santomeri, Achaia, Greece. Crafted exclusively from the indigenous Roditis grape, this wine offers a pure expression of the region's terroir, characterized by clay-loam soils, schistose rocks, and a Mediterranean climate with mild winters and dry summers.

Cultivation
The Roditis grapes are cultivated in certified biodynamic and organic vineyards situated at 400 meters above sea level with a 20% slope. The vines, planted in 1992, thrive in clay-loam soils interspersed with schistose rocks. The vineyards are dry-farmed, and sustainable practices are employed to preserve the natural biodiversity of the soil and reflect the unique character of the terroir.

Vinification
Following manual harvesting, the grapes undergo spontaneous fermentation with indigenous yeasts in stainless steel tanks over 28 days, without temperature control. The wine also undergoes spontaneous malolactic fermentation and is aged for six months on its lees in stainless steel tanks. It is bottled unfiltered and unfined, with minimal sulfite addition.

Aroma and Taste
Sant’or Roditis Nature presents a bright white-yellow hue. The nose reveals aromas of citrus peels and mineral hints. On the palate, it offers a rich mouthfeel with crisp acidity and a long aftertaste.

Food Pairing
This wine pairs beautifully with feta cheese and seafood, white meats, and salads. Its vibrant acidity and mineral notes complement dishes such as grilled fish, shellfish, and fresh vegetable preparations.
